Funny, we were just talking about this elsewhere. If I know someone celebrates Christmas, I wish them a Merry Christmas. If I know they celebrate Chanukah, I will wish them a Happy Chanukah. Whatever they wish me (Happy Holidays/Chanukah or Merry Christmas) I will wish it back to them. If I don't know them I will say to them that I hope they have a Happy Holiday (and mean it).
